I have found that Maple Cinnamon breakfast cookies are a great way to start a conversation with kids about baking and healthy eating. They include three types of protein; egg, nuts and oats. They take less 15 minutes from start to finish. And they are easy enough for kids to make.
1. Mix the oats, sugar, cinnamon and nuts well. You can use any kind of nut you want.
2. Add the maple syrup into the mixture so that it is as evenly dispersed as possible.
3. Mix the egg into the mixture well. Be sure the egg is mixed into every part of the mixture. The egg helps to keep the cookies from falling apart when they are cooked.
4. Grease a baking sheet. We tried to make these cookies without greasing the baking sheet and the were very hard to remove .
